Lazy Daisy Cake

 Ingredients for the cake:

1/2 cup milk

1 T butter

2 eggs

1 cup sugar

1 cup flour, sifted

1 tsp. baking powder

1/4 tsp. salt

1 tsp. vanilla

Ingredients for the topping:

2/3 cup brown sugar

1/3 cup melted butter

2 T thick cream

1/2 cup coconut

Directions:

Scald milk, to which butter has been added and keep hot while mixing other ingredients. Beat eggs until light and foamy. Then add sugar and beat well with an egg-beater or electric mixer. Sift the flour, salt and baking powder till well mixed, then add vanilla and hot milk, stirring carefully. Bake in a greased pan, either a loaf or oblong flat pan, at 375 degrees.

While cake is still warm, spread on the topping. Return to oven and leave till the frosting caramelizes, but not long enough to dry out.

Grandma's Notes: Grandma remembers her mom, Bessie Van Dusseldorp, often making this. They would pour fresh rhubarb or strawberry sauce over the top. They would have this at home. This recipe card came out of Bessie's collection and you can see that it was well-used.
